ON REPEAT
What I cook on a weekly basis!
I feel like in the kitchen I have two personalities :) I am certainly creative, constantly looking for new ideas, new inspo, developing new recipes and at the same time I am boring and monotonous (of course in a positive way), repeating the recipes I know and love.
It’s just no matter what, there are things I eat on repeat every week or even every day and love them. Of course it changes seasonally with the availability of fresh produce but basically there are some staples I always crave or I just know do good for me and support me.
And sometimes I do find myself cooking sth out of the desire to change up things a little bit and then actually don’t feel like having it on the other days :) Fun, I know haha
But… here is the list of what works for me currently, what I enjoy and what is on a regular rotation, repertoire and menu in my kitchen.
Roasted sweet potatoes with tahini sauce - obsessed to the point I have to stop myself sometimes from eating them as If I could I probably would have it for every meal. Lately love making them in the air fryer but roasted in the oven are as delicious. And if I am craving a proper meal I am often pairing it with ground beef and some fresh herbs. THE BEST.
Rice noodles - my go to thing when I don’t know what to eat. Cooked and drizzled with olive oil, tahini, garnished with fresh herbs and sprinkled with salt and dukkah! Always hit the spot! Sometime I add them to the broth with some veggies too! But that’s a weekly meal for sure, often also served with veggies and eggs or salmon :)
Grains - rice - white, brown or red, millet, quinoa or buckwheat - that’s on rotation daily! I love grains and always have them as a base! Paired with eggs for breakfast, fish or meat for lunch or dinner and sometimes have it as a sweet ish bowl with yoghurt, nut butter, some granola and jam.
Roasted salmon - baked simply with salt until it turns into pure perfection usually served with rice noodles, brown rice noodles or millet noodles, sweet potatoes, quinoa or rice. And if not a salmon then halibut :)
Poached eggs - for breakfast every day, literally since 1st of Jan I have been eating them pretty rigorously haha, maybe had a different breakfast max 5 times. Just love having the yolk runny and paired with cooked grain o a choice and usually courgette or carrot, before it was pumpkin :)
Ground beef - lately I have been incorporating more meat into my diet and been loving eating ground beef cooked with spices and served with sweet potatoes, rice and some cooked veggies. Or in a burger patty cooked in an airfryer fryer. If not a ground beef ground turkey is my second go two on a weekly basis.
Silken tofu chocolate mousse - this is just the best and so filling! A perfect snack, treat and desert. Served with a spoon of blackcurrant jam, nut butter and granola. Thinking about making one now :)
Chocolate tahini/peanut butter fudge - takes few minutes to make and then brings maximum satisfaction for the next few days. A piece that melts in your mouth is all you need to feel good!
Chocolate chip cookies - a staple that never gets boring. I do sometimes bring variations into my own recipe, different nuts, different spices, chocolate or flour but this is always it!
Buckwheat crepes - that’s my favourite 2nd breakfast, delicious gf crepes with some yoghurt, blackcurrant jam and nut butter. Pure perfection, joy and pleasure! Bring a smile on my face, always!
Sourdough with butter and salt :) - simplicity that always win! Sometimes when I don’t feel like eating sweet potatoes, grains, eggs etc. again that is the simplest yet the best pairing that always hits the spot!
